  • 2 medium tomatoes, pureed
  • 1 teaspoon ginger-garlic paste
  • 2 green chilies, finely chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon amchur (dry mango powder)
  • Salt to taste
  • 1/2 teaspoon kasuri methi (dried fenugreek leaves)
  • Fresh coriander leaves for garnish

Instructions

1. Prepare the Brinjals

  1. Wash and slit the brinjals in a cross shape, keeping the stem intact.
  2. Heat 2 tablespoons of Double Hiran Mustard Oil in a pan.
  3. Add the brinjals and shallow fry until they are slightly tender. Remove and set aside.

2. Prepare the Masala Gravy

  1. Drizzle one additional tablespoon of Double Hiran Mustard Oil in the same pan.
  2. Including mustard and cumin seeds. Let them drool.
  3. Chop onions, then sauté till golden brown.
  4. Add the green chiles and ginger-garlic paste. Cook for two minutes till the raw scent vanishes.

  2. Cover and, tossing regularly, let it simmer on low heat for eight to ten minutes.
