Traditional Bihari Litti Chokha Recipe with a Mustard Oil Twist

Bihari Litti Chokha Recipe with a Mustard Oil Twist

Popular traditional cuisine from the Indian state of Bihar, litti chokha is noted for its simple tastes and wholesome ingredients. Litti, wheat flour balls stuffed with spiced sattu, make up this dish, which is served with chokha, a smoky mashed concoction of roasted vegetables including potatoes, tomatoes, and eggplant. Cooking it with Double Hiran Mustard Oil enhances its taste and authenticity, rendering it even more appetizing. Here on this blog, we will walk you through creating the ideal Litti Chokha dish with mustard oil.

Ingredients

For the Litti:

  • 2 cups whole wheat flour
  • 1/2 cup sattu (roasted gram flour)
  • 3 tablespoons Double Hiran Mustard Oil (for the dough and filling)
  • 1 teaspoon carom seeds (ajwain)
  • 1 teaspoon fennel seeds (saunf)
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon nigella seeds (kalonji)
  • 2 tablespoons chopped coriander leaves
  • 1 teaspoon red chili powder
  • 1 teaspoon ginger powder
  • 1 teaspoon pickle masala (optional)
  • Salt to taste
  • Water, as needed for the dough

For the Chokha:

  • 1 large eggplant (baingan)
  • 2 medium tomatoes
  • 2 medium potatoes
  • 2 green chilies, finely chopped
  • 1 small onion, finely chopped
  • 2 tablespoons Double Hiran Mustard Oil
  • 1 teaspoon mustard seeds
  • 1 tablespoon lemon juice
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

1. Prepare the Dough for Litti

  1. Add 1 tablespoon of Double Hiran Mustard Oil, carom seeds, salt, and whole wheat flour to a mixing bowl. Stir thoroughly.
  2. Water should be added gradually to create a soft dough. Cover and put away.

2. Prepare the Sattu Stuffing

  1. Combine the sattu, chopped coriander leaves, red chili powder, cumin, nigella, fennel, and pickle masala in a separate bowl.
  2. Mix the sattu mixture well after adding 2 tablespoons of Double Hiran Mustard Oil. If necessary, add a small amount of water to create a crumbly stuffing.

3. Shape and Cook the Litti

  1. Roll out the dough into little balls. Put a tablespoon of the sattu filling in the middle of each flattened ball.
  2. Form into a smooth ball and carefully seal the edges.
  3. Set the oven temperature to 180°C (350°F). Place the filled littis on a baking tray and bake for 25 to 30 minutes, turning them occasionally to ensure equal cooking, until they are golden brown.
  4. The littis can also be cooked on a griddle or tandoor on the stovetop.

4. Prepare the Chokha

  1. Roast the potatoes, eggplant, and tomatoes in the oven or over an open flame until they are tender and browned.
  2. After cooling, mash the roasted veggies in a bowl and remove the charred skin.
  3. Add the lemon juice, mustard seeds, green chilies, finely sliced onions, and salt.
  4. Over the mashed mixture, drizzle two tablespoons of heated Double Hiran Mustard Oil. Add some fresh coriander leaves as a garnish.

5. Serve

  1. Serve a heaping portion of chokha alongside the hot littis.
  2. For an added taste boost, drizzle the littis with a little Double Hiran Mustard Oil.

Health Benefits

Using double hiran mustard oil improves the traditional taste of your litti chokha and offers a number of health benefits. Mustard oil is a strong source of omega-3 and omega-6 fatty acids, which reduce inflammation and support heart health.
